This is so good and easy to make! I cut the sun dried tomatoes into small strips. It tastes really fresh and easy. I didn’t add any additional herbs. Just salt, pepper, olive oil and lemon juice. Yum!

It turned out alright. I wish I had cut the tomatoes into tiny chunks and seasoned it more, but the addition of lemon juice helped a lot. Didn’t end up liking it but my mom enjoyed it.

I added too much sun dried tomato which made it too tomato-ey. Could have used a couple more vegetables to make it heavier. But otherwise yummy and easy.

Delicious! I used chickpea spaghetti noodles as well as the zucchini noodles. Turned out very well, my family loved it.
