  • 1 teaspoon ground coriander
  • 2 teaspoons ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon turmeric (fresh grated)
  • 3 yellow bell peppers (long, chopped)
  • 1 lemongrass stalk (white part, chopped)
  • 1 garlic clove (minced)
  • 1 onion (chopped)
  • 2 teaspoons galanga (fresh grated)
  • 1 bunch fresh cilantro (minced)
  • 1 teaspoon shrimp paste (found at Asian grocery stores)
  • 1 tablespoon oil

    Directions

    1. In a small pan without any fat toast coriander, cumin and cinnamon until fragrant (1 to 2 minutes)
    2. Put the toasted spices and all the remaining ingredients(except the oil) in a mortar and mash them to get a smooth paste. Add the oil and mix.
    3. Store in the refrigerator or freeze it in small portions.
