Makes one 8-inch cake. The cake is very dense, extremely moist and needs no filling. It should either be served at room temperature or a little warm.

  • 1 1/4 cups pastry flour
  • 1 teaspoon baking soda
  • 10 1/2 ounces bittersweet chocolate (cut into small chunks)
  • 12 tablespoons unsalted butter (at room temperature)
  • 1 1/4 cups sugar
  • 4 eggs (separated)
  • 1/3 cup whiskey (or brandy, warmed slightly)
  • 1 tablespoon vanilla extract

    Directions

    1. Preheat the oven to 350 degrees F. Line a baking tray with parchment paper and set an 8 x 2-1/2-inch ring on it. Rings can be purchased online or at a good baking supply shop. Wrap an 8-inch cardboard round with foil and set aside.
    2. In a small bowl, sift together the flour and baking soda. Set aside.
    3. In a double boiler or a metal bowl placed over simmering water, melt the chocolate. Keep warm.
