I used this recipe as a base guide because I didn’t have some of the ingredients, but oh my goodness!!!! My family ate so much, all I got were the bites I had while cooking it! I may double the batch next time! All I used was soy sauce and a splash of rice vinegar for seasoning! I used a bag of mixed various greens and cabbage, water chestnuts, bean sprouts, green onion, and of course, ground chicken…I may add scrambled egg next time, but it’s a great recipe to jump off from!

Pretty good! I ended up switching out the coleslaw mix for vermicelli noodles because my s/o dislikes cabbage. Only critique was that the flavor wasn’t very strong; ended up adding a bit of red curry paste to give it some heat. Next time I’ll probably use 1/2 pound of chicken (for expense reasons) and go with jasmine rice instead of the coleslaw.
