Having read the comment below I increased the amount of egg as it acts as a binder. I also put them in the fridge for an hour which helps them keep their shape. I don’t like sweetcorn so added diced yellow pepper. I also added a clove of garlic. They turned out great!

I like the idea of this, and it was OK taste wise, but honestly it was almost impossible to get the mix to stay in burger patties. it took a lot of squeezing and molding to get something together to go on the baking tray, and then whilst baking those shapes completely disintegrated. Was a lot of faff and I probably wouldn't bother again.
