Warmed Ricotta with Apricots and Honey

  • 3 1/2 ounces Amaretti Cookies (or macaroons)
  • 1 1/2 pounds ricotta cheese (about 3 cups)
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 2 pounds apricots halved
  • 14 ounces apricot halves
  • 2 tablespoons honey

    Directions

    1. Preheat broiler to medium. Lightly grease a shallow baking dish and line with a layer of amaretti cookies or macaroons. Beat ricotta, sugar and vanilla together until smooth. Spoon over cookie base.
    2. Place apricots, round-side up, on top of ricotta mixture and drizzle with honey. Place under broiler for 8-10 minutes, until the apricots are soft and golden. Serve immediately.
