    Goat cheese overpowers everything and does not go with the other flavors, and I LOVE goat cheese. If you make this skip that ingredient or at least start with 1/4 of what this suggests to use.

    I used honey goat cheese and added herby grilled chicken on top. Looooved it! I loved the freshness from the mint too.

    I used a kashi blend instead of quinoa. I also did a mix of fig goat cheese and plain. AND, I topped it with grilled shrimp- YUM. I added more mustard than it called for, as I like that extra tang.

    It was just good. Not great. I enjoyed the sweet crunch from the pomegranate seeds. Maybe honey goat cheese would of added a bit more flavor.
