  • 2 tablespoons coconut oil (or extra-virgin olive oil, or ghee, clarified butter)
  • 1 onion (large, finely chopped)
  • 2 garlic cloves (finely chopped)
  • 2 teaspoons cumin seeds (or 1 tsp ground cumin)
  • 1 chilli (fresh, more if you like it hot, deseeded and finely chopped)
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 2 carrots (finely chopped)
  • 150 grams sweetcorn (frozen, defrosted)
  • 3 celery sticks (large, we used the leaves too, finely chopped)
  • 150 grams walnuts (very finely chopped)
  • 300 grams mixed beans (dried, such as kidney, black and adzuki, black eye or borlotti, soaked in cold water overnight, then boiled in fresh water for 40-50 minutes until tender, or 3 x 400g cans cooked mixed pulses, drained)
  • 400 grams tomatoes (tins)
  • 2 teaspoons sea salt
  • 60 grams dark chocolate (strong, at least 80 per cent cocoa solids, roughly chopped)
  • 120 milliliters natural yogurt
  • 1 handful coriander leaves
