  • 8 3/4 cups chickpea (or gram flour)
  • 1 green chili (long, deseeded, finely chopped)
  • 2 tablespoons fresh cilantro (chopped)
  • 1 teaspoon ground turmeric
  • 1 teaspoon Garam Masala
  • vegetable oil (for deep-frying)
  • 1 red pepper (large, deseeded, cut into pieces)
  • 2/3 pound cauliflower (cut into florets)
  • 1 zucchini (large, thickly sliced on a bias)
  • 2/3 cup plain yogurt
  • 2 tablespoons fresh mint (finely chopped)

    Directions

    1. Combine flour, chili, cilantro, spices and 1 tsp salt. Gradually whisk in 1 cup water until smooth.
    2. Heat oil over medium-high heat. Working in batches, lightly coat vegetables in batter then deep-fry for 3 mins, or until golden and tender. Drain on paper towels. Season.
    3. Meanwhile, combine yogurt and mint. Season. Serve with vegetable pakoras.
