  • 75 milliliters mirin
  • 15 milliliters rice wine vinegar
  • 1 garlic clove (finely grated)
  • 2 teaspoons ginger (finely grated)
  • 2 teaspoons Sriracha (adjust to taste, optional)
  • 200 grams tofu (firm, cotton not silken smoked, pressed)
  • 2 tablespoons oil (high smoke point, I use rice bran)
  • 200 grams savoy cabbage (chopped)
  • 100 grams shiitake mushrooms (or chestnut mushrooms, sliced)
  • 3 spring onions (/ scallions, white part thickly sliced and green part thinly sliced)
  • udon noodles (400 g / 14 oz wok ready / precooked, or 200 g / 7 oz dry)
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons sesame seeds (toasted, and optionally crushed, to garnish)
