  • 250 milliliters vegetable stock
  • 3 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon mirin
  • 1 teaspoon cornflour
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 tablespoons sesame seeds
  • 1 tofu (pack of Cauldron Organic, drained and pressed for 20 minutes)
  • 4 tablespoons cornflour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons aquafaba (the liquid from a can of chickpeas, whisked until stiff peaks)
  • 100 grams panko breadcrumbs
  • 100 milliliters vegetable oil (for frying)
  • 4 radishes (thinly sliced)
  • 1 carrot (peeled into ribbons)
  • 125 milliliters rice wine vinegar
  • 1/2 teaspoon salt
