    This was great. Didn’t make it vegan, added cheese. Also didn’t measure things out, just added a full can of corn, beans, and a huge handful of spinach. Probably tripled the quantity of spices for more kick.

    It was good, don’t put too much sweet potato as it’ll make it too sweet. I added onion.

    Nice adapted a bit. I cooked the potatoes and blitzed them with the skin. Then added all the rest. Also added more spices. And definitely koriander in stead of parsley! Also served wuth guac and Greek yoghurt. Fried them whole, 1 on top of the other instead of folding in half. Next time also add toms in filling and paprika. And salsa on the side.
