  • 1 onion (diced)
  • 6 cloves garlic (minced)
  • 1 bunch asparagus (woody stalks removed and chopped into 1-2 inch pieces)
  • 8 ounces mushrooms (about 15 or so if you use crimini, roughly chopped)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt (to taste)
  • 1/2 cup white wine (optional)
  • 1 cup arborio rice (uncooked)
  • 3 cups vegetable broth
  • 2 cups spinach (chopped)
  • 2 teaspoons nutritional yeast (optional)
  • 1/4 teaspoon onion powder (optional)
  • 2 teaspoons lemon juice

    This was my first time making risotto. It came out deliciously! Subbed white for red wine cause thats all i had and followed directions as is. Soo good!! Ate as a meal but will make for guests with a salad and some fish maybe. yum

    This is a delicious risotto with a nice amount of vegetables in it. I used a combo of kale and spinach because I did not have enough spinach for a full two cups, it still tasted delicious.
    Lovely & easier than other risotto dishes I’ve made. When OH asked if he could help after all the prep was completed, I had the perfect job - stir this I said 😂, lots of stirring 👍

    Very yummy!! I added tumeric to add a little more yellow coloring to the rice. Will make again :)

    It was good. It didn’t have the umami I was looking for. So I added more nutritional yeast. Then a bit more salt. Each addition created more flavor. Then I added a bit of butter! Perfection. Will do this one again with ghee next time. 4 for potential. 3 for what I initially ate.

    i added a bit of my own seasonings such as garlic salt and powder, mine was quite different because it lacked white wine, (due to me being underage haha) but i would definitely make again!

    My kids loved this! One of them added Parmesan cheese and pine nuts. I used morel mushrooms since they are in season. Mmmmm.....

    great recipe. easy to follow, just need patience with this type of rice. i doubled the mushroom and added jalapenos for extra kick. very nice flavor and texture.

    Lovely creamy. My first risotto. I added a bit more broth and nutritional yeast to make it creamier. Also added some rosemary because I had some that I wanted to get rid of.

    Beautiful... First time I've made a recipe from this site have to say I'm hooked. Did add a little too much whit wine but still turned out delicious
