  • 1 aubergine (large)
  • 1 sweet potatoes (peeled)
  • 1/2 cup all-purpose flour (/ rice flour for GF version)
  • salt
  • pepper
  • 1 cup aquafaba (gelatinous, *, homemade or from a tin of chickpeas)
  • 100 grams panko breadcrumbs (** or GF breadcrumbs if required)
  • 2 tablespoons sesame seeds
  • oil (high smoke, for shallow frying)
  • 2 tablespoons oil (neutral tasting)
  • 1 onion (large, I used red, finely diced)
  • 5 garlic cloves (finely diced)
  • 3 teaspoons ginger (finely grated)
  • 2 medium carrots (peeled and sliced)
  • 1/2 granny smith apple (apple, peeled and diced)
  • 1 tablespoon white miso (paste, GF miso for gluten-intoleranc)
  • 4 teaspoons curry powder (I used hot madras curry powder)
  • 1 teaspoon Garam Masala
  • 4 teaspoons tamari sauce (or soy)
  • 2 teaspoons rice vinegar
  • 2 teaspoons mirin (sweet Japanese rice wine or maple syrup, to taste)
  • 2 cups rice (your favourite, cooked or steamed)
  • 1 head lettuce (I used lollo rosso)
  • salad dressing (sesame oil, vinegar, mirin, tamari / soy sauce, all to taste)

    We really enjoyed this, its a fair amount of prep work but its worth it. the Katsu Curry sauce is fantastic. We are Veggie so i switched the aquafaba for egg wash and it worked fine. probably saved me 20 minutes of extra prep haha!

    So tasty! Tasted almost as good as wagamamas but couldn’t get the smith glossy texture!
