I find pancakes are quick easy to make for snack/breakfast/dinner. so easy that i engage my 5 yr old to do the measuring and pouring. I use more healthy/nutritious versions of flour like atta (whole-wheat flour) and millet instead of plain white flour. if the mixture get thicker i adjust with milk. (for vegan you can use more soy milk) and i add choc chips for my kids pancakes :D you can substitute butter/margarine with olive oil (same measurement)
