Ingredients

  • 1 avocado (ripe, chopped)
  • 2 tomatoes (quartered)
  • 1/2 cup cilantro (minced)
  • 3 limes
  • 3 scallions (thinly sliced)
  • 2 tablespoons olive oil
  • 2 cans tuna (drained)
  • 1 teaspoon chile flakes (arbol, may substitute cayenne)
  • salt and ground black pepper

    Directions

    1. Whisk together the olive oil, 2 tablespoons lime juice, and chile flakes. Season with salt and pepper. Set aside.
    2. Combine the tomatoes, scallion, cilantro, and tuna. Add the salad dressing, tossing to coat.
    3. Add the remaining tablespoon of lime juice to the avocado and sprinkle with salt. Add to the salad, tossing carefully.
    4. Serve.
