  • 1/2 tablespoon olive oil
  • 1/2 cup onion (chopped)
  • 1/4 cup mushrooms (canned)
  • 100 grams ham (diced)
  • 1 clove garlic (chopped)
  • 1/2 teaspoon paprika
  • 15 1/2 ounces chickpeas (canned, drained)
  • 1 cup water
  • 1 tablespoon chicken bouillon (powdered)
  • 3 tomatoes (ripe, chopped)
  • panela cheese (diced, or basket cheese)

    Directions

    1. In a large saucepan, heat the olive oil and saute the onion, mushrooms, ham, garlic, and paprika. Once the onion is transparent, add the chickpeas, water, powdered bouillon, and tomatoes.
    2. Cover the saucepan and boil for 15 minutes. Turn the heat off and let the soup cool for a few minutes. Puree until smooth using a hand mixer or in the blender.
    3. Garnish with the panela cheese and serve.
