  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken breast halves
  • 2 cloves garlic (finely chopped)
  • 1 green bell pepper, sliced
  • 1 1/2 cups chicken broth
  • 1/3 cup skippy super chunk peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons ground ginger
  • 1/2 teaspoon crushed red pepper flakes
  • 2 sliced green onions
  • 1/2 pound linguine, cooked and drained

    Directions

    1. Heat 1 tablespoon oil in large skillet over medium-high heat and cook chicken, stirring occasionally, until chicken is thoroughly cooked, about 7 minutes. Remove chicken and set aside.
    2. Heat remaining 1 tablespoon oil over medium-high heat and cook garlic and green pepper, stirring occasionally, 2 minutes. Stir in broth, Skippy® Super Chunk® Peanut Butter, soy sauce, honey, cornstarch, vinegar, ginger and red pepper flakes and cook, stirring frequently, until sauce is thickened and smooth, about 2 minutes. Return chicken to skillet. Stir in green onion and simmer until heated through, about 3 minutes. Serve over hot noodles. Garnish, if desired, with chopped peanuts and chopped fresh cilantro.
