    While this is a much healthier option than regular potato skins, I expected the Thai flavors to "pop" more than they did. I am an avid fan of Thai food, this fell a little short.

    Time-consuming, but worth it! I didn't have a chili or lemongrass paste, so I substituted 1 tablespoon of Thai red curry paste
