  • 100 grams green beans (trimmed)
  • 150 grams shiitake mushrooms (sliced)
  • 250 grams courgette (sliced)
  • 400 mL organic coconut milk
  • 6 kaffir lime leaves
  • 2 Tbsp. groundnut oil
  • 4 green chillies (roughly chopped, remove seeds if you prefer less heat)
  • 1 banana shallot (roughly chopped)
  • 2 cms fresh ginger (piece, roughly chopped)
