  • 1 cup frozen corn
  • 15 ounces rotel (can of, drained)
  • 1/2 cup canned black beans (drained and rinsed)
  • 1/2 cup green onion (chopped, plus 2 tbsp to top off with)
  • 1/2 cup sharp cheddar cheese
  • low sodium taco seasoning (Homemade)
  • 2 tablespoons Mrs. Dash seasoning
  • 1 1/4 teaspoons chili powder

    Very tasty, but a little dry. Next time I will not drain the Rotel, but rather cook down the liquid until it gets to my desired level of liquid. I also think that the liquid will help with mixing in all of the powdered ingredients.

    quick, easy meal! a few changes i made: -I didnt mix the rice with the meat/bean/corn mixture, and i topped the bowl with cheese, lettuce, sour cream & salsa. -the only spices i used on the meat were: garlic salt, pepper, cayenne powder, paprika, cumin. this turned out delicious!

    Family gave it a 4 only because they wanted more cheese. Now realize I put a cup on it but they wanted it mixed in. This is a great easy recipe for weekend or weeknight.

    I made some changes, I didn’t use taco seasoning and added cumin and Goya adobo. Oh and fresh cilantro! Delish!!

    This turned out great!! I used white rice and didn't use the corn. It was fantastic! I made it in the morning and let everything sit in the fridge until dinner (except for the cheese, rice and green onion).

    This was a fast and easy meal to make. It is a little spicy but, in the cool weather it will keep you warm. I deffinately enjoyed even more with the sour cream.😊

    this was so fast & good. We also added a spoon of sourcream. This kids asked for seconds. We will be making this again.
