  • 2 gold beets (medium sized)
  • 2 red beets (medium sized)
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • salt
  • pepper
  • 2 lobsters
  • 1 cup brown sugar
  • 2 tablespoons tea (black loose, I used Jasmine)
  • 2 tablespoons shallot (minced)
  • 1/4 cup white wine
  • 1/4 cup white wine vinegar
  • 1/2 cup butter (cut into small pieces)
  • 1/4 teaspoon cayenne pepper
  • salt (to taste)
  • 2 tablespoons fresh tarragon (minced)

    Directions

    1. Wash the beets and trim the roots and stem, drizzle with 2 tablespoons of olive oil.
    2. Roast the beets in a preheated 350 degree oven until they are easily pierced with a knife, about 1 1/2 hours.
    3. When the beets are cool enough to handle simply slip the skins off or pare with a knife.
