  • 250 grams black turtle beans (soaked for 24 hrs)
  • 1 bay leaf
  • 1 tablespoon olive oil
  • 2 shallots (finely chopped)
  • 2 garlic cloves (finely chopped)
  • 2 tablespoons tomato purée
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon chilli flakes
  • 1/2 teaspoon coco (powder)

    Directions

    1. In a large sauce pan cover the beans with plenty of water, add the bay leaf and bring to the boil, simmer for an hour to cook the beans or until they are soft.
    2. In another pan heat the olive oil and soften the onion and garlic. Add the cooked beans and all the other ingredients, simmer for 20 minutes.
