    Family LOVED this. I actually used red lentil penne instead of regular... could NOT tell the difference. The noodles cooked like normal, and it was so delicious. Definitely adding to the regular rotation as “taco night.”

    This was very simple, easy and delicious! Who does not like a one pot dish? I substituted 1 can of Rotel for the salsa and omitted the cilantro as my family are not fans. Before finishing in the oven, I added a bit of heavy cream and American cheese to thicken the sauce. I finished in the oven topped with shredded cheddar. It was YUMMY! I also crushed some nacho Doritos and everyone sprinkled some on top before eating. This is now in the dinner rotation!
