  • 200 grams onion (Cut into wedges)
  • 800 grams sweet potato (Peeled and chopped into 1.5cm-2cm chunks)
  • 200 grams carrot (Peeled and cut into a similar size to the sweet potato)
  • 1 tablespoon harissa paste
  • 100 grams dried dates (Cut in half)
  • 1 tablespoon honey
  • 2 teaspoons dried mint
  • 1 teaspoon sumac
  • 250 milliliters vegetable stock
  • 1 tablespoon lemon juice
  • 1 stick cinnamon
  • 50 grams blanched almonds
  • 1 teaspoon cumin
  • salt
  • vegetable stock
  • freshly ground black pepper (To taste, I love black pepper so I add about 1/2 teaspoon or maybe more)
  • 35 flaked almonds
  • 100 grams celery (Finely sliced)
  • 50 grams spring onions (Finely Sliced)
  • parsley (As much as you dare finely chopped)
  • 1 tablespoon lemon juice
  • 200 milliliters vegetable stock
  • salt (To Taste)
