  • olive oil (for cooking sweet potatoes)
  • 1 1/2 cups cooked brown rice (or sub cooked quinoa with varied results)
  • 1 cup black beans (cooked salted, rinsed and well drained, if unsalted, add more salt to the burgers)
  • 1/2 cup green onion (finely diced)
  • 1/2 cup walnut meal (or pecan meal, very finely chopped)
  • 2 1/2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon salt (to taste)
  • 1/4 teaspoon pepper (to taste)
  • 1/4 teaspoon chipotle powder (optional)
  • 1 tablespoon brown sugar (optional, for added sweetness)

    I have made these burgers many times and we love them! The combo of ingredients give these patties a satisfying umami flavor. I often swap out the rice for any other leftover or quick cooking grain on hand and the recipe is very forgiving. One of our favorite swaps is couscous!

    So delicious and held together well! I actually added some ingredients bc I like garlic and onion in my burger and saw someone use corn in theirs too. I made those additions and used quinoa instead of rice to be healthier. I really enjoyed it!
