  • 1 red onion
  • 2 tablespoons olive oil
  • 3 teaspoons fresh ginger (peeled, cut into small pieces)
  • 450 grams sweet potato (peeled, cut into pieces)
  • 2 apples
  • chicken stock (1 lt.)
  • fresh cilantro
  • 2 teaspoons sugar
  • creme fraiche (or greek yogurt)
  • 15 grams butter

    Directions

    1. In a skillet, saute the onion with the olive oil for 5 minutes, add ginger (2 teaspoons) and sweet potato, cook and stir for 6/8 minutes .
    2. Add 1 apple cut into pieces . Cook for 2/3 minutes.
    3. Add the chicken stock, a small bunch of cilantro. Season with salt and pepper.
