  • 2 large eggs
  • 1 cup sour cream
  • 2 cups cake flour (or all-purpose flour, for cake)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt (for cake)
  • 1 cup all purpose flour
  • 1/2 cup sucralose-based artificial sweetener (ex: Splenda, granulated, for streusel)
  • 1 1/2 teaspoons cinnamon
  • 1 dash salt (for streusel)
  • 1/4 cup unsalted butter (melted, for streusel)

    Directions

    1. Preheat oven to 350°F.
    2. Spray pan liberally with nonstick cooking spray. Set aside.
    3. Place butter, sweetener, and vanilla into mixing bowl. Use mixer to cream ingredients together on medium-high speed until smooth, 1-2 minutes. Add eggs and sour cream and continue beating until mixture is light and fluffy, 1 minute longer.
