  • 1 sheet pastry dough (puff)
  • 250 grams cheese (stracchino, or ricotta, mascarpone)
  • 1 egg
  • 50 grams bacon (pancetta, cut into cubes)
  • 6 artichokes (in oil)
  • 4 tablespoons Parmesan cheese (grated)
  • 2 slices cheese (emmental, cut in strips)

    Directions

    1. Preheat the oven to 190C
    2. Roll out the dough and place it in a pie plate.
    3. In a bowl, combine the stracchino cheese with the egg, add the bacon cubes, the sliced artichokes, and the parmesan.
    4. Add the mixture to the pie crust, add the emmental slices and sprinkle with breadcrumbs.
    5. Fold over the edges of the puff pastry and bake the quiche for 20 to 25 minutes until golden.
