  • 2 pork ribs (racks, about 4 1/2 lbs)
  • 1/4 cup kecap manis (thick sweet soy sauce)
  • 1/2 cup tomato sauce
  • 1/2 cup barbecue sauce
  • 1 large carrot (cut into matchsticks)
  • 2 celery sticks (cut into matchsticks)
  • 3 green onions (thinly sliced on the diagonal)
  • 2 tablespoons french fried onions (store-bought)

    Directions

    1. Line 2 large baking pans with double layers of foil. Place ribs on prepared trays. Mix sauces and pour over ribs; turn to coat. Cover with plastic wrap. Refrigerate for at least 2 hours to marinate.
    2. Preheat the oven to 400°F. Bake ribs for 1 hour, turning and basting occasionally, until caramelized and cooked through.
    3. Cut ribs into smaller sections; transfer to a serving platter. Add carrot and celery to platter. Mix green onions and fried onions in a small bowl. Serve ribs sprinkled with onion mixture.
