  • 1 cup lettuce (washed and chopped)
  • 2 slices turkey bacon
  • 1/2 cup feta cheese (crumbled)
  • 2 teaspoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic (minced)
  • salt and ground black pepper

    Directions

    1. Whisk together the olive oil, vinegar, oil, salt, and pepper.
    2. Fry the bacon in a skillet until crispy. Remove from the skillet and use a paper towel to blot off the excess grease.
    3. Heat the vinaigrette in the skillet until it begins to simmer. Set aside to cool.
    4. Place the spinach and lettuce in a salad bowl. Cut the bacon into pieces and add to the salad. Drizzle with vinaigrette and serve.
