Directions
- Preheat oven to 350 degrees Fahrenheit. Lightly grease a 1-quart baking dish.
- In a medium bowl, mix together artichoke hearts, spinach, mayonnaise, Parmesan and 2 cups of jack cheese. Transfer mixture to the prepared baking dish, and sprinkle with remaining 1/2 cup of jack cheese.
- Bake in the center of the preheated oven until the cheese is melted, about 15 minutes.

For the most part it was pretty good. It was a little dry. I needed more artichoke. That was my fault.

I've made a recipe similar to this however it had a teaspoon of chopped garlic and no Monterey Jack cheese. It was amazing and just enough spice.

I did 1/2 cup mayo and 1/2 cup cream cheese instead of all mayo. I also added salt, pepper, all purpose seasoning, onion, and garlic powder.
Sprinkling a bit of mozzarella on the top and broiling for an extra 3 minutes added the perfect amount of extra flavor!

I would use cream cheese or something thicker than the mayo - it’s delicious but a little thin and greasy

I have made this several times because the men I live with eat it up before dinner is done. I time it just right so they can eat the dip until dinner is done. They've even asked me to make it at their family get togethers even though someone else cooks. It has just enough artichokes and there can be more spinach so I add a few more ounces.

Thought it would have more flavor. Salt and pepper? Otherwise easy to make and looked good. Perhaps I needed a different bread or cracker.
