  • 12 sheets phyllo dough (– about)
  • 1 sweet onion (– chopped)
  • 9 ounces frozen spinach
  • 1 bunch Italian parsley (chopped)
  • 2 cups ricotta cheese
  • 8 ounces feta cheese (– crumbled)
  • 2 eggs
  • 1 dash fresh ground black pepper
  • 1 dash nutmeg
  • 10 slices deli ham (boiled)
  • olive oil (for drizzling)
  • 5 butter (pats of, – melted)
  • 1 teaspoon lemon juice

    Directions

    1. Heat a large frying pan with a drizzle of olive oil add the onion, spinach and parsley and sauté until the onion is clear and then set aside.
    2. In a large bowl combine the ricotta cheese, feta cheese, dashes of black pepper, dash of nutmeg and the eggs and mix well. Slowly add the spinach mixture to the ricotta mixture stirring as you add it and mix well.
    3. Butter a baking dish. In a small bowl place the melted butter plus the lemon juice.
    4. Place a sheet of phyllo dough and brush with the butter and lemon mixture. Continue to build the phyllo dough repeating this process; about 6 sheets. Add the spinach mixture, then top with the slices of ham. Repeat the phyllo dough process on top of the ham.
    5. Place in the oven for about 30-35 minutes or until the phyllo dough turns a beautiful golden color.
