  • 1/2 stick unsalted butter
  • 1/4 cup diced onion
  • 1/8 cup red bell pepper (diced)
  • 1/8 cup green pepper (diced)
  • 12 ounces hot sausage (Italian, diced)
  • 1 teaspoon cayenne powder
  • 2 tablespoons Tabasco Sauce
  • 1/4 cup cajun seasoning
  • 1 tablespoon worcestershire sauce
  • 4 cups fresh tomatoes (crushed)
  • 1/4 cup tomato paste
  • 2 tablespoons dry red wine
  • 1 cup unsalted butter
  • 8 ounces white fish (your favorite, I use orange roughy)
  • shrimp (8 ounces med. raw, peeled, deveined)
  • 8 ounces bay scallops (cleaned)
  • 8 ounces shucked oysters (fresh, or mussels)
  • 6 tablespoons dry white wine
  • 2 pounds fettuccine (cooked, depending on the sauce to <)
  • 1/2 cup heavy whipping cream
  • 1 1/2 cups sauce (spicy)
  • grated Parmesan cheese

    Directions

    1. Saute the onions, peppers and sausage in butter. Add remaining ingredients and simmer for 10 minutes.
    2. Saute the first 4 ingredients in the butter and wine for about 4 minutes. Add fettuccine and cream and simmer another 4 minutes. Add 1 1/2 cups (or more if necessary) of the spicy sauce and simmer until well thickened. Top with the cheese and serve with tossed green salad.
