  • 1/4 teaspoon mace
  • 1 pinch ground cloves
  • 150 grams butter (/5½oz)
  • 125 grams muscovado sugar (dark brown)
  • 150 grams golden syrup (/5½oz)
  • 50 grams syrup (from the jar of stem ginger, optional – replace with more golden syrup or honey if not using stem ginger)
  • 200 grams black treacle
  • 250 milliliters milk
  • 1 teaspoon bicarbonate of soda
  • 2 large free range eggs (lightly beaten)
  • 1 jar stem ginger (drained, washed and very finely chopped, optional)
