  • 1/2 cup butter
  • 3/4 cup light brown sugar
  • 2 eggs (beaten)
  • 1 2/3 cups all purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking powder
  • 1 pound apples (peeled, cored, roughly chopped)
  • 4 pieces ginger (preserved, in syrup, drained, roughly chopped)
  • 4 tablespoons ginger syrup
  • powdered sugar (demerara and, to sprinkle)
  • honey

    Directions

    1. Preheat oven to 325°F. Lightly grease and line a 7 inch cake pan with greased parchment paper.
    2. Cream butter and sugar until smooth. Gradually beat in eggs. Sift together flour, spices and baking powder then fold in. Fold in apples, ginger and ginger syrup. Transfer to prepared pan and bake for around 1 hour 45 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 10 mins then transfer to a wire rack to cool completely.
    3. Once cool, sprinkle with demerara sugar and dust with powdered sugar. Cut into slices. Serve with honey and whipped cream sprinkled with cinnamon.
