  • 50 grams beans (frozen soya)
  • 1 Tbsp. sesame oil
  • 2 carrots (peeled, then grated or cut into thin ribbons)
  • 150 grams red cabbage (finely shredded)
  • 100 grams mooli (or radishes, cut into matchsticks or thin slivers)
  • 1 green apple
  • 3 spring onions (finely sliced)
  • 1 bunch coriander (small, roughly chopped)
  • 1 handful mint leaves (roughly torn)
  • 1 handful basil leaves (or more coriander, roughly chopped)
  • 40 grams toasted sunflower seeds
  • 25 grams toasted sesame seeds (a mixture of black and white looks good, to serve)
  • 1 fresh ginger (thumb-sized chunk, peeled)
  • 1/2 garlic clove
  • 50 grams Tahini
  • 1 lime juice (Juice of 1 lime)
  • 1 Tbsp. Sriracha (or your favourite style of chilli sauce)
  • 1 chilli (bird’s-eye, stalked removed, optional)
  • 1 Tbsp. soy sauce
  • 1 Tbsp. demerara sugar
  • 3 Tbsp. sesame oil
  • 25 mL water
