  • 2 Tbsp. essence (Emeril’s, recipe to follow)
  • 3 Tbsp. flour
  • 1/4 cup vegetable oil
  • 3 cups beef broth
  • 6 cups onions (sliced)
  • 3 cups green peppers (sliced red and)
  • 1 cup celery (sliced)
  • 3 tsp. salt
  • 1/2 tsp. cayenne pepper (you can lessen this or leave out)
  • 1/2 tsp. black pepper
  • 1 tsp. chopped fresh parsley
  • 2 1/2 Tbsp. paprika (I used smoked paprika)
  • 2 Tbsp. salt
  • 2 Tbsp. garlic powder
  • 1 Tbsp. black pepper
  • 1 Tbsp. onion powder
  • 1 Tbsp. cayenne pepper
  • 1 Tbsp. dried oregano
  • 1 Tbsp. dried thyme
