  • 1 slice bacon
  • 1 medium carrot (chopped)
  • 1 rib celery (chopped)
  • 1/2 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup tomatoes (ground)
  • 1 cup water
  • 1 teaspoon cumin
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 bay leaf
  • 2 teaspoons brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 cup lentils (cooked)

    Directions

    1. In a medium saucepan, sauté bacon over medium heat until crispy.
    2. Add carrot, celery, and onion to the pan and sauté for 10 minutes until vegetables begin to soften. Add garlic and stir for 30 seconds.
    3. Add ground tomatoes, water, cumin, chili powder, paprika, bay leaf, brown sugar, salt, and pepper. Bring mixture to a boil. Reduce heat to low, cover, and allow mixture to simmer for 30 minutes.
    4. Stir in lentils and cover. Cover and cook an additional 15 minutes.
