  • 1 tablespoon dijon mustard
  • 1 teaspoon Tabasco Sauce
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 2 cloves garlic (Caramelized, see recipe)

  • freshly ground black pepper (to taste)
  • 1/2 lemon
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dry white wine
  • 1 cup vinaigrette (Grilling, see above)
  • 1 tablespoon fresh ginger (chopped)
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1 pound tuna steak (1" thk)
  • 1 cup hoisin sauce
  • 1 cup catsup
  • 2 tablespoons soy sauce

    Directions

    1. Grilling Vinaigrette: Mix well and allowed to sit at room temperature to enhance its flavor.
    2. Combine the Grilling Vinaigrette, ginger, soy sauce, and sesame oil in a non-reactive bowl. Add the tuna steak and marinate for 1 hour in the refrigerator, turning the tuna once or twice.
    3. Smoke the tuna for 45 to 50 minutes. Chill to serve. Serve with dipping sauce.
