    I love everything coconut and when I saw ‘Cake for days’ I thought ‘You haven’t met my family’. Of course I had to figure out how to make at least a regular loaf and tripled the recipe as suggested. I used only 1/3 of the sugar per our taste. It was a hit!!!!! Everyone in my family loved it. This is going to be a staple in my household for sure.

    Changed some of the ingredients. Used gluten free flour (King Arthur) and swerve sweetener. I added just a bit less of the sweetener. Even with less sweetener I had to add a few tablespoons of coconut milk. I added finely chopped pecans to the bottom of the pan and the top of the cake before cooking. Turned out delicious.
