A great recipe with all of the great spices. Dinner was loved by all of the family too! Planning ahead, I generate the luxury of time; so I marinated the meat in the Maesri curry paste - 1 whole tin (4 Tablespoons perhaps?) with some oil & garlic too, for 24hrs before slow-cooking. I also put in 2xZucchini with the Aubergines which added further body to the meal and 'broke down' to add a nice thick sauce over the meat. Finally I also added a can of diced tomatoes in the last hour of cooking - so that they didn't lose too much flavour, but again added to the body of the meal. I just love the 'Maesri' brand of Red, Green and Yellow curry pastes - good quality flavours without the fuss of blending all of the necessary spices to get the same result! Cheers...

Excellent & full of flavour - I added baby corn instead of green beans & this gave a lovely extra crunch. Quick, simple & healthy.....no leftovers sadly!
