    Fan-tasty-tastic! Great recipe, which I improvised on slightly and did with wild rice, sprouting broccoli and cumin and honey baked carrots.

    Found the balsamic vinegar taste was far too strong, not sure it was supposed to taste so vinegary x

    This recipe appealed to me as it reminded me of bruschetta which I absolutely love. Was straight forward to make. I'm not a big fan of tomatoes so I took all the gooey, seedy parts out, that took bit of time. The final result was a bit watery I have to admit but it tasted lovely. I served it with low carb rice. Think I'll serve it with butternut squash spaghetti next time and add some black olives. Would recommend this dish.

    I added mushrooms after I sliced the onions, it is a really good recipe, I have made it a number of times
