subbed basil for parsley. should've bought bigger sweet potatoes to have less to peel, but a good side to make while prepping a main since you only have to stir every so often

It was delicious!! Even my boyfriend and my kids liked them so yummy I cooked mine on the skillet for this amount of time and then put them in the oven at 425 for 15-20 minutes so they were soft on the inside and a little crispy on the outside so amazing

WOW ridiculous! This makes a bunch of perfectly cooked bites with so much flavor! I covered my potatoes for the last 4 minute stretch of cooking still stirring occasionally to not stick Good god this was awesome. For 2 people we used 2 potatoes and it was a ton with leftovers.

Delicious. Didn't realize till I got home from the store that I had got white sweet potatoes so it wasn't as golden as the picture but the flavor was wonderful.

As you can probably tell, once I cubed the potatoes, everything else was in my head. I used garlic, green onions and pecans to favor the potatoes. It was good but I love sweet potatoes in any form.

They were really good but would maybe substitute the coconut oil for olive oil seeing how the potatoes are sweet enough. I also added some paprika for a little spice. Other than that they were delicious.
