Description

  • 1 red onion (medium)
  • 3 medium carrots
  • 1 1/2 tablespoons extra virgin olive oil
  • 6 boneless skinless chicken thighs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons tomato paste
  • 1 cup chicken broth
  • 2 tablespoons harissa paste (double it if you like spicy food)
  • 1/2 teaspoon ground cumin
  • 1 can chickpeas (15 oz. per can, drained and rinsed)
  • 2 tablespoons fresh cilantro leaves (and tender stems)
  • 1/2 cup plain greek yogurt (whole milk, or low-fat)

    Directions

    1. Preheat oven to 425°F.
    2. Slice onion through root end into 1/2-inch wedges. Cut carrots on an angle into 1/2-inch slices. Set aside.
    3. Heat oil in skillet over medium heat. Season chicken with salt and pepper. Add to pan, flat side down, and cook until golden brown, 3 minutes. Transfer to plate and set aside, leave drippings in pan.
