Description

There’s nothing hard about making soft tacos. Boneless chicken thighs, your favorite taco fillings, a skillet and an oven are all you need.

  • 4 Tyson® Fresh Boneless Skinless Chicken Thighs
  • 1 package taco seasoning mix (1 1/4 oz., divided)
  • 1/3 cup water
  • 6 flour tortillas (6 inch)
  • 1/2 cup refried beans (canned)
  • 1 cup Mexican cheese blend (shredded)

    Directions

    1. Preheat oven to 400°F. Spray baking sheet with nonstick cooking spray.
    2. Cut chicken in 1/2" pieces. Sprinkle 1 tablespoon taco seasoning onto chicken.
    3. Spray medium nonstick skillet with cooking spray. Heat over medium-high and add seasoned chicken. Cook and stir 3-4 minutes or until done (internal temp 170°F).

    Very simple and delicious. I diced up a small sweet onion and a red bell pepper and sautéed it with the chicken. I loved the texture of the baked flour tortillas.

    We cooked our chicken on a low temperature from semi frozen for a while, I think that helped with texture and moisture. Could also use some Pico type filling. Overall easy and tasty.

    Great recipe! Quick and easy. I did follow the advise of other users and added onions and bell peppers 👌🏻(Thank you for the tip). I choppped and sauteed about half an onion and half red bell pepper in olive oil, and added a little salt and pepper to taste. Also, I topped with cilantro and chihuahua queso. (mexican cheese for tacos) Delicious! Husband approved 😁

    It's better when you add few extra ingredients, like peppers and onions. Also, I had no refried beans... But it still turned out OK. I think it would taste best with refried beans and onions and peppers added.
