  • 1 cup kosher salt
  • 1/2 cup dark brown sugar
  • 1/4 cup black peppercorns
  • 2 Tbsp. granulated garlic
  • 1 Tbsp. molasses
  • 4 bay leaves
  • 2 sprigs rosemary
  • 1 cinnamon stick
  • 1 gal. water

    I have used a similar Brine to this for years. This brine is great but I replace the water with apple juice. also you want to use a little more sugar, salt and garlic. Go heavy on the molasses. I also dice up an onion and throw in the marinade, when using salt use coarse salt as it will give better flavor. I inject the turkey with half Lawry's herb and garlic marinade and half Carol butter. also I sprinkle kicked up mustard on the outside and spray it with olive oil just before I put it in my smoker. stop the cavity with apples and celery to keep the meat moist.

    The Brine turned out ok. I put my twist on it and added another cup of sugar and salt
