  • 1 package smoked sausage
  • 8 ounces baby carrots
  • 3 tablespoons olive oil
  • 1 small red onion (peeled and cut into 8 wedges)
  • 2 teaspoons chopped rosemary
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 Honeycrisp apple (medium, cut into 12 wedges)
  • 1 lemon (halved)
  • 2 tablespoons chopped parsley
  • 8 ounces brussel sprouts (halved lengthwise)

    Directions

    1. Cut sausage in 1/2" bias-cut slices and set aside.
    2. Place a large baking pan in oven. Preheat oven to 450°F.
    3. Toss carrots, Brussels sprouts, onion with oil, rosemary, salt, and pepper in a large bowl. Arrange vegetable mixture and sausage on preheated pan in a single layer. Bake in preheated oven until just tender, about 20 minutes.
    4. Preheat broiler to high. Add apple to pan; broil until apple is tender and vegetables are slightly caramelized, 5 to 6 minutes. Remove pan from oven. Squeeze lemon over pan and sprinkle with parsley.

    This turned out great. Had it for dinner tonight. My family loved it. Lots of veggies no complaints like I usually get when I give them veggies. These vegetables tasted good and the apple slices very good. Definitely making this meal again

    My wife does 99% of the real cooking in the house. My turn we agreed to do more here (I do other stuff, just been our division of labor) and made with my son. Kids won't touch it, but mom did so I'm happy.. I liked adding some jalepenos and small potatoes.

    This recipe was so good. I don’t have much cooking experience, but this low-cost, easy-to-make meal was so yummy. I substituted broccoli for Brussels sprouts and didn’t put the lemon over it. This was so good I will definitely make it again and use the whole onion. Maybe two cut up potatoes on the side.

    Overall, it was absolutely delicious, however I think next time I will omit the lemon juice at the end. While it tasted good on the other ingredients, the carrots soaked up a lot of it and so I had sour carrots. Otherwise, it was perfect.

    I added potatoes and used two packages of sausage to make sure I would have enough food for a family of four. I had to use two sheet pans and two rotations under the broiler (Otherwise it was too much to keep on a single layer in one pan). It came out amazing! Everybody loved it! Even the teenage boys.

    So yummy! I changed the recipe just a tad, instead using venison sausages and using sweet potato in place of the Brussel sprouts. My husband called it an 11/10.

    Very good. We changed it a little and added broccoli minus the Brussels sprouts. Also just baked it all together with the apples, no broiler. Easy to make and delicious. I will double the sausage for meat lovers.
