  • 4 spring onions (topped and tailed)
  • 1 mango (small ripe)
  • 50 grams mange tout (shredded)
  • 50 grams bean sprouts (fresh)
  • 1 handful fresh coriander (washed)
  • 200 grams salad leaves (mixed small, such as mizuna, watercress or lamb’s lettuce, washed)
  • 50 grams cashew nuts (roughly chopped)
  • 1 red chilli (halved, seeded and finely shredded)
  • 12 scallops (fresh large, in their shells, see below for how to shuck them)
