Sausage and chicken breast complement each other to delicious effect in this one-skillet supper, which also includes fresh mushrooms, cilantro, and lots of garlic, plus just enough lemon juice to balance out all the flavors. You can use whichever type of sausage you like best so long as it is dried or already cooked and can be sliced; chorizo or kielbasa are both good options, and are easy enough to find in any supermarket.

  • 5 garlic cloves (minced)
  • coriander (to taste)
  • fresh mushrooms (sliced, to taste)
  • 2 chicken breasts (cut into small pieces)
  • salt (to taste)

    Directions

    1. Heat a drizzle of olive oil in a frying pan, add the sausage, garlic, and coriander, and saute.
    2. When the mixture starts to brown, add the mushrooms, and fry for a few minutes.
    3. Add the chicken, season with salt and a bit of lemon juice and cook for 8 to 10 minutes.
